Should we continute to use a DOCKER_REPO env variable? #42

This is related to issue #33. If we are not supporting pushing to Docker Hub at all, we can stop using this var as it complicates installation and setup. If we do continue to support it, we need a way for a user to be able to provide their own value or use a raas repo, so we're not using mine....

Simplified through dockerization process. Can now be set in the docker-compose.yml file, and using docker simplified installation process.
