Similar to https://github.com/rancher/rke2-docs/pull/111, we need to update the https://docs.k3s.io/installation/requirements#large-clusters with newer information. Additionally, the page should be reworked to consolidate the "large cluster" info with the "single node" information in the upper portion of the page.
