Remove irrelevant `weight` field from front matter #271

We have a legacy field of weight in the top of most of our docs pages. Per https://docusaurus.io/docs/3.0.1/api/plugins/@docusaurus/plugin-content-docs#markdown-front-matter, this doesn't do anything.

Removed all instances of this unused field.
