[Feature] Automatic version and build date #72

Summary

As "a developer"\ I want "that wrestic's version is set automatically during build"\ So that "it's not forgotten"

Context

Release 0.2.1 of wrestic doesn't contain the right build date or version.

Out of Scope

completely overhauling the CI/CD this should only be a quickfix until this is part of the k8up repo

Acceptance criteria

Given "github release"\ When "the image gets built"\ Then "versions are set accordingly"
