Update config #133

I think I've kept the configuration changes mostly consistent with what they were previously, however I may have missed something.

Marking as draft for now because I want to find a way to disable Geyser update checking as there should be a configuration somewhere

Can you get rid of the CommandSpy config folder aswell? CommandSpy will create it's own folder & config if it doesn't exist anyways.

I believe the empty folders were due to the file permissions set on the plugins folder on runtime.
