Allow CompareExtractionMethods.sh to perform just one part of the process #32

During testing, we don't always want to run all parts of the process because this can be time-consuming. If the table extraction has already been performed, we may want to just perform the table mapping for one or all methods We may want to re-run just the evaluation part or generation of the graphs
