nextrelease documentation

The scope of this issue is all of the documentation for nextrelease. The goal of this ticket is to ensure a minimum acceptance criteria for documentation is met before merging nextrelease to master for the v0.14.0 "jack-o'-lantern" release (https://github.com/lily-seabreeze/sappho/milestone/1).

Acceptance criteria:

[x] README.md: New animated GIF/screen recording of sappho's demo.py in action
[ ] Eveything has thorough docstrings
[ ] Docstrings have been reviewed for accuracy
[ ] documentation, gh-pages: make sure our lovely sphinx docs are updated (as a last step). Publish to gh-pages. Also move domain to sappho.seabreeze.pro. Pygame install docs.
[ ] Proof, one last edit of all README.md files
[ ] Review of CONTRIBUTING.md
[ ] @kcsaff, @txanatan had a chance to poke at AUTHORS.md, etc.

@talm-quest want to double check docstrings, as well as enhancing them? Also, proofing README.md files (there are multiple)? Feel free to add yourself to the AUTHORS.md (everyone should be able to).
