Addresses #33. Followed Sophie's code originally, but then nudged in the other direction for small improvement. Also changed strat function to "first" rather than "mean", but NA still remains at the borders of the different categories, not sure why.
Here is a possible way to fill those in, but we would need the land raster first to prevent the coastline from shifting.
