How to handle guest participants

When guests come out for lunch, how would we include then in the amount owed, but make it optional for them to be a part of the fund? Currently, we just assign them to another name and fix up later. Would it be easier to add the ability to add people in the fly or put a guest option in that would adjust the calculation?
