Fix deploy docs actions #277

Gatsby and nodejs need updating. There are a number of errors and warnings, unsure which is the problem:

  1. Update node version

After updating from 12 to 16 in the action, and updating the deployment plugin, things still aren't working

  1. Error with BABEL
error [BABEL] Note: The code generator has deoptimised the styling of /home/runner/work/react-native-bluetooth-classic/react-native-bluetooth-classic/docs/node_modules/react-dom/cjs/react-dom.development.js as it exceeds the max of 500KB.

Ugh, the apollo docs theme is deprecated/archived. Will need to replace the theme at some point, for now the docs will not be updated.
