Change name of package

[kenneth-gray]

Originally this package was a port of data-mocks, but as a server version. Over the years it has diverged enough and even helped to contribute supporting GraphQL back into data-mocks as well.

Potential considerations:

• mock vs. stub
• Does data meaningfully mean anything?
• Include scenario in the package name
  • Could alienate some use cases, or alternatively strengthen the case in which it provides the most value
