Add a README with usage examples #3

Can you add a readme with usage examples for all of the modes here. Turns out no one knows how to configure this thing.

Specifically, need more details on these flags:

--fanout <group>           Join fanout group
--filter <filter>          Filter traffic
--translate <spec>...      Translate address

Also how to only look at DNS/HTTP/Other traffic on a given port.

Sure, how about using the GitHub wiki? Little bit more flexible and easier to update vs making commits to a README.md.
