Need to support multiple roles out of the gate. #16

In the initial model, a user had a specific role (job seeker, mentor, coordinator). The world is messier. We all look for a job a some point. It is healthy for users to be both job seekers and mentors. Redesign to allow for this.

The work to update the tracker application is completed. We need a notification mechanism but it shouldn't live in the tracker application. I'll open a new issue for this feature.
