Revision to environment.yml needed for installing conda env from .yml (necessary for M2 chip computers)

What happened?

Two modules, celerite2 and mc3, repeatedly failed to install during installation. Designating them to be installed as pip dependencies in the environment.yml resolved the issue and installed eureka with no errors.

An example of revision is shown below, as the attachment function on GitHub is not working at the moment:
