Add transforms using Astronomer cosmos

• [x] Create profiles and project configs using Astronomer Cosmos.
• [x] Create incremental refresh for materialized fact tables and views (Hint - Use max(load_date))
• [x] Figure out a plan to divide the loaded product tables (Games , Genres, Platforms, Publishers, Ratings) into respective fact and dimension tables (Hint - ideate using ER diagrams made from Eraser.io)
