Fixes user-storage-simple and user-storage-jpa quickstarts to work with latest Keycloak on quarkus3
Fixes compilation failures in quickstarts

TBD: Tests are still failing (due the tests in user-storage-* are still trying to use resteasy 3 instead of resteasy6 - not yet exactly sure why...
