Version Packages (follow up) #9087

Follow up to https://github.com/keystonejs/keystone/pull/9071, where the version packages didn't end up releasing the artifacts.

This pull request is rebased on https://github.com/keystonejs/keystone/tree/2024-04-02, not main, although it will be merged into main to keep our git history.

@PaulAroo @borisno2 0281b9b has been published. The tagged commit from the action deleted the examples/ and tests/, so I have updated the tags manually to 6855a60, which is what you see in this pull request now.
