Create documentation on available API endpoints #31

Create documentation for the API point that are available. Please include an example of the request structure and any headers that are needed. Also add a sample response and how the url needs to be formatted.

API Documentation is manage in the postman for all the available API endpoints. Including the examples of how to structure the requests, any necessary headers, and a sample response.
