9 years ago This is a good idea and will be added to the roadmap, hopefully for Pro 0.5.
I also have several feature requests for associating products with stores, eg: you could create a store for a special event with a subset of products.

Rather than only having the ability to give users access to the entire POS based on role it would be useful to be able to assign specific users access to specific stores.
If using the POS with multiple store locations you may want to give workers at each store access only to that store or in our case we have affiliates and sales reps who wish to use the POS, but we only want them to have access to their store and not the entire POS and WP Admin.
