Pin matplotlib to latest version 3.1.1 #3

This PR pins matplotlib to the latest release 3.1.1.

matplotlib 3.1.1 raises the error:

NotImplementedError: It is not currently possible to manually set the aspect on 3D axes

when plotting in 3D. Closing this and waiting for a future version of matplotlib, or alternative package is used for 3D (such as mayavi).
