docs: better docs for `windowSoftInputMode` and its cooperation with this library

Added additional comments for adjustResize and edge-to-edge combination.

💡 Motivation and Context

Seems like documentation is still unclear, so I'm adding more links, comments and explanation how edge-to-edge mode works with adjustResize and why it's crucial to specify adjustResize if you want to track keyboard movement on your own.
