[prometheus-thanos] add default security context

Upgrade Thanos to the latest stable version
Add default security context for Pods and Containers to support new default user id https://github.com/thanos-io/thanos/pull/6107

Yeah, this isn't related to the changes in this chart. There is an issue with the helm version in the other charts from this repo. I have tried to fix that but in https://github.com/kiwigrid/helm-charts/pull/468, it is still open.
