CoreKiwix.xcframework not usable with iOS Simulator #667

To be assessed but it looks like XCode is not happy when trying to build for iOS Simulator: says it can't find the CoreKiwix module. Might be that compilation flags for our iOS x86_64 target are incorrect.

No I believe the issue is with the archive lib themselves not the xcf. @kelson42 what's the priority for this?
