I got going on this a while ago, fizzled. Here's what I wrote down. I managed a few batches that were really good, the best bottled with hibiscus and a enough sugar that it really fizzed. Friends who tasted it were impressed.

This batch has been fermenting forever. Black tea from the seward coop, I don't remember exactly what kind. It got too cold above my fridge and the brew wasn't doing anything for a month or two. I put it in the boiler room to kick start. It was there for a week maybe. I haven't been very scientific. I washed everything I'm using to bottle it in the dishwasher. Here goes nothing.

green : unfiltered (3) others: cheesecloth`d

green: plain blue: honey red: ginger yellow: ginger + honey one each with a squeeze of lemon

I put them along with all the scobies + a few cups liquid into the boiler room around 8pm. Covered with old clothes

other flavors: sesame seeds? frozen berries. hibiscus is great.

Brewing irish bkfst tea. 4tbsp tea, 2qt hot water, 1.75c white sugar. +2qt cold filtered water. Fridge'd. Poured into my big glass jar. Plus ~1.5qts more filtered water, to shoulder of jar. Covered w/ paper towel and old tshirt. Boiler room at 7:30pm.

Started: ??? / 1 week ago 5/16: Not quite I don't think 5/25: done and bottled

5/25: new batch started, 1.5 mothers and about an inch of starter liquid in bottom of jar 6/07: Done. Still tastes gross? I blame the fukuyuju tea?

6/08: Going to do a batch of bigelow tea bag green tea w/ white sugar 6/22: Back from telluride. It's a bit strong but I think good! Bottled 1.5L + little blue bottle and saving rest for next.

6/23: New batch. White sugar, 8 pints water 5 tea bags 7/7: Tasting decent.? Pulled out 2 bottles for a second ferment. 1 with huckleberries/blueberries and one with mango. See how it goes. Tomorrow by the homebrew store to look for bottles with tops. 7/8: 2.25L bottled. Tastes OK. Brewed 6qts of Trader Joe's green tea and used turbinado sugar (1cup+). 7/9: In it goes.
