switch to coral-xyz, bump version #61

Thanks for the PR @khaIilnafis. Can you also do these steps:

Change the anchor-lang dependency version in tests/example-program/programs/example-program/Cargo.toml to match the release version
Bump the version outputted by --version flag in src/main.ts

I've bumped the version to v0.28 on npm https://www.npmjs.com/package/anchor-client-gen
