Add geostats #4

Add in the geostats model

Does not include variogram analysis, only the kriging component
Currently only uses direct simulation, so will be slow for a large number of interpolated points

I like the changes to setup.py and example_config. The Geostats module looks like a good skeleton now. it still has some placeholders (totally fine), but importantly, I notice it's missing a verify_inputs() function.

I'm happy to merge this now and take more PRs later, or wait if you want to push more onto this one. Do you have a preference?
