docs: Improve docs around `examples/` #481

Problem There seems to be some great examples in the repository but it is not clear without having a deep understanding maybe of knative-eventing or NATS, what purpose they serve or what can be learned from them.

Exit Criteria Testing for the actual existence of documentation doesn't really tell us if it is usefulness or coherent, I'm not sure if there is a binary that we could run against documentation (yet) that would give us that signal.
