fix: ensure updates to the store propagate correctly #139

Introduces two new hooks: useCreateNotificationStore and useNotificationStore with a hacky fix that forces re-renders
Fixes incorrect usage of setState doing, effectively, double sets into the store (this will also help with our Zustand migration)
Introduces a new useStableOptions hook and shared across useAuthenticatedKnockClient and useNotifications hooks
Adds new /headless page in the example app
