Update Sphinx in env to v5 #11

Wanted to go to v6 but myst-nb is currently holding it back.

This doesn't fix the current layout weirdness in the index page. But it seems this is related to https://github.com/mcmtroffaes/sphinxcontrib-bibtex/issues/322 / https://github.com/mcmtroffaes/sphinxcontrib-bibtex/issues/309 (layout is fine again if downgrade to docutils 0.17 from 0.19). docutils 0.20 is available on cf, but not getting it due to Sphinx placing ub. On cf, Sphinx 7.0.1 is the first to allow docutils 0.20. So I guess for now the best solution is to ub docutils.
