xAI/Grok support #317

xAI embeddings look planned based on their docs, but aren't generally available at the moment.

Changes

Added Grok model using OpenAI SDK, currently using OpenAI embeddings.
Added grok.json profile and added to settings.
Added XAI_API_KEY to keys.
Updated README to include Grok and link to xAI docs.
