I realised there were old Travis bits left in docs so I started out fixing that.

While there I took the opportunity to try all the documented development commands and found some no longer working...

Update Mix and npm dependencies to get asset builds working again
Fixed the code coverage report

It is possible these things will be changed further in the work to support Laravel 10, but better get this in first so we can do a proper release of this package for Laravel 9.

I have not yet looked in browser at the production CSS and JS builds in a real project locally. It seems the changes were minor, but I just want to check quickly before we merge this PR, hence the draft status.

I won't get the chance to do that browser test until later today though, so @erik-epineer if you got a local project already set up for testing, feel free to check out this branch and publish the assets! 😄

I've checked the CSS & JS in a local site now! I think this PR is ready to merge!
