Upgrade `swagger-parser` to latest version (`2.1.16`) #20

This PR updates swagger-parser to the latest version. This version also depends on a new version of snake-yaml (v2) which should solve some issues with Gradle 8.

Closing this as I don't longer use this plugin, and there are a bunch of new swagger-parser releases in the mean time.
