how can I change the set point and operation mode online? from another place, because from what I see here, you just can connect to the ESP using the same wifi ssid. right?

Changing of the set point and operation mode online from another place is covered in section A2-openHAB.

In particular to execute control anywhere from internet openHAB provides my.openHAB.
