Fix sortOptions removal when running edit command #5689

FIX: When running kustomize edit set image sortOptions was removed.

E.g. with

apiVersion: kustomize.config.k8s.io/v1beta1
kind: Kustomization

sortOptions:
  order: fifo

images:
- name: test
  newName: test

when running kustomize edit set image test=test:123, resulted in:

apiVersion: kustomize.config.k8s.io/v1beta1

kind: Kustomization

images:
- name: test
  newName: test
  newTag: "123"

(notice the missing sortOptions)

Hi @oli-f. Thanks for your PR.

I'm waiting for a kubernetes-sigs member to verify that this patch is reasonable to test. If it is, they should reply with /ok-to-test on its own line. Until that is done, I will not automatically test new commits in this PR, but the usual testing commands by org members will still work. Regular contributors should join the org to skip this step.

Once the patch is verified, the new status will be reflected by the ok-to-test label.

I have added two read-and-write tests, which is the case during the edit operation - before there was only a write-and-read test:

Checking that all properties of the kustimization object are en-/decoded into the kustomization file is not part of this test.
