Update e2e tests to conform to KEP obligations to unblock beta #14

Parent issue tracking work to bring MCS API repo e2e tests up to par with the KEP requirements. For more background, see the e2e test section of the MCS API beta blockers working doc which are based on the Test Plan in the KEP.

@lauralorenz Might it be worth adding on to this issue to run these tests in Prow on PRs and periodically against the master branch? Unless that's already happening and I'm just having a hard time tracking that down. Happy to help add that!
