Update Calico images with 3.27.0 #353

The latest Calico images available are

calico-node:v3.26.1-hostprocess
calico-install:v3.26.1-hostprocess

It would be very helpful if the image builders could be nudge with the latest Calico 3.27.0.

Follow-up to SIG-Windows meeting from today is that the use of those images is discouraged and the images are planned to be decommissioned. Since Calico now offers solid support for HostProcess Containers, users should follow the official https://docs.tigera.io/calico/latest/getting-started/kubernetes/windows-calico/operator
