One person could start a vote, with 1...n alternatives, decide if 1 or n choices can be voted for (like radio or checkbox in html), and the bot keeps track over who's voted what.
Different triggers could be used to display different results (total results, one person's choice, etc.)
Not really sure if it would be used at all, just in idea.
