Please update the config for membership coordinator name to Laura Schuhbauer.

Can we actually just make it neutral? It doesn't need to have a specific name, just leave it with the job title (aka Membership Coordinator) so we don't have do this every year.

Also, the slack link seems to have expired. a link is auto-sent when members are set to active, but multiple people have complained that it was expired when they got the email. i can create a new link if needed.
