implement remaining osc commands in Simulation #2

i can do this based on the processing app, but it would also be good to have the markdown up to date first so i can implement it from a spec you are happy with.

I'm pretty sure the doc is 98.6% correct- the extra parameters to /status are the only exception I can think of.

I added the dead zone adjustment message tonight, but realized while walking home that dead zone should probably be dynamic: fairly large when velocity is 0, and small when the winch is moving.
