Use common label selectors (with no downtime)

Description

As a follow up to https://github.com/kyma-project/nats-manager/pull/236, use common label selectors for the nats-manager and its resources.

Take into consideration

Labels only refers to labels on resources which are needed to run the manager itself. NOT to the NATS instance created by the sts.
Upgrade should not cause downtime.
Align with https://github.com/kyma-project/community/issues/864.
There should be one central place where the labels/selectors are defined.
Check if we should use the commonLabels construct in the kustomization config.
