Refresh the documentation #305

There are a few open issues concerning the documentation, that indeed could be improved.

We could use a PR to coordinate some efforts.

@rosecers could you please use this to address your own issue #295 ? perhaps a UWMadison student could do this? @MaximeScope, after #303 is merged, could you take care of updating the screenshots (and perhaps the text... in https://chemiscope.org/docs/tutorial/panels.html) ?

I've also a couple of misc fixes that I already started implementing

Ehm... thanks for merging this but the idea was to first merge the color PR and add here also some additional fixes @rosecers wanted to do. No point in reverting the merge I think but in the future perhaps ask for a review before merging a PR
