I also had that issue; it come from the exiv2 library.
Version 0.19 is really slow with Nikon specific tags, and they corrected this
with version 0.20.

Problem still open:
(Exiv2 updated to 0.21, jbrout SVN DEC 27 2010)
tagging a single jpg make by NIKON D7000 takes about 15 seconds.
Maybe Exiv2 replies with an error message to JBROUT requests. Infact exiv2 is
not slow at all (you can try exiv2 from shell) and the delay could come from
the JBROUT handling of error messages.
Example of exiv2 command from shell:
$ exiv2 -M"add Iptc.Application2.Credit String Mr. Smith" DSC_0599.JPG

This now works quickly with the current version of jBrout and pyexiv 0.3-4
please confirm if this is still an issue
