I tried the recipe provided as well as a few variations and the result is simply too wet. I think the problem is that all the potatoes/vegetables going into it aren't dry and their moisture doesn't really get released until the baking process. I tried adding a lot of extra flour with only slight improvement. The 70 minute baking time also resulted in a fairly burnt outside.
Even with lots of extra flour, the batter before baking was extremely dense and had to be spooned into the baking pan - still too wet after 70 minutes. I'm not a baker so I unfortunately don't have much to contribute. It is possible that the official squares use dry powdered vegetables so that this isn't an issue. I asked him in an email if he uses dry/powdered vegetables without any response (not that I exactly expected one).
Anyway, just wanted to put this here in case someone else came across this and wanted to experiment. The official squares are unfortunately very delayed right now (been waiting close to 2 months I think).
