MacOS CI failing with "ERROR: Dependency "OpenBLAS" not found" #57

Pretty sure this is related to this issue https://github.com/scipy/scipy/issues/21738.

We could try manually installing OpenBLAS to fix it or ignore MacOS for now and wait for an upstream fix.
