python[patch]: Client -> LangSmith #1220

"Client" is highly likely to exist in other sdks making it slightly annoying to use + unclear. Other SDKs like OpenAI and Anthropic have moved from Client -> OpenAI/Anthropic. think using LangSmith would be clearer as well.
