Update UMT submodule to v5.3.0a and update benchmark docs to match this UMT version.

@richards12 I'm not done with this branch, but I wanted to get the MR going so you could see the doc updates. I need to verify my docs build a pdf correctly, and also update the csv files and the graph files.

TODO items:

run V100 benchmarks with SPP1 and SPP2 and upload csv and png files.
my full plots in gnuplot look right, but my 'abridged' plots don't look right.

UPDATE: New baselines were included in this merge, using the new mesh generator.
