cmake version match tag #22

I have noticed that both the package and the git tags show versions 1.0.0, 1.1.0, and 1.2.0. The version in cmake still shows 1.0.0.

I think we should add an item to the PR checklist to make sure and update the cmake version when doing a tagged release.
