Setting up demo data for test purposes #76

This ticket consists of setting up required demo data for testing purposes.

There should be events and users. As some features are reliant on the proxy api running on aws amplify, we need to figure out how to work past that.

Maybe we need to store one day on the proxy api just for test purposes?
