Add `pixel count` layer for MS composites #68

We want to know the number of pixels that go into making each seasonal max NDVI composite value. I think this count layer can me made here: https://github.com/lauraduncanson/icesat2_boreal/blob/a44fe9bf6ed57eea4affc9efae398741ce50fa85/lib/3.1.2_dps.py#L187 @aliz237
