Move out of osixia/openldap #196

Use this updated and more secure image: https://github.com/sudo-bot/docker-openldap

It requires some documentation on my end. But osixia/openldap should be avoided, it's very out of date

osixia/openldap is used for internal development and testing, and works fine.

Most probably hides security issues of many sorts and is totally not maintained
